My boys got to go with their Grandpa Val this week to Escalante for a couple of days. They LOVED it! Anytime we get to spend with Grandpa is treasure time! I understand they stayed in a bed and breakfast in Escalante, Utah named "Slot Canyon Inn" Sounds fun huh!?
My boys have raved about the breakfast pancake that they made! So we googled and found this recipe. Chandler says it was close! It is perfect for this fall season, so that I thought I should post it here so I will remember it next year! Chandler says that they put the apple in while it was still cooking - she opened the oven and put it in so the pancake wrapped around it more than ours did. He also said that she didn't put the apricot jam on it, she had it warm for them to pour on like syrup. He says hers was not quite as done as ours was at 20 minutes as the recipe says. We did not add the almonds or powdered sugar to ours. They were delicious! Trying them again today!
Blessings of today include: a nice house (that needs cleaning!), darling young people in my home, time together, a husband who is wonderful, fall time with the crisp morning air, beautiful leaves, nice cars to drive, responsibilities :), healthy bodies! Today I will start a new "Thankful List" and put it on our table. I like to use adding machine tape. We write the date at the top, and start writing! Rolling it one way and see how many, many miracles we are Thankful for! We have many to count! Thank you Heavenly Father!
APPLE PANCAKE

PANCAKE:
4 tbsp. butter
4 eggs
1 c. milk
1 c. flour
1 tsp. sugar
1/2 tsp. salt
APPLES:
1 tbsp. butter
1 tbsp. sugar
3 Golden Delicious apples, thinly sliced
1/2 tsp. cinnamon
1/4 tsp. nutmeg
GARNISH: (OPTIONAL):
1/4 c. apricot jam, warmed
1/4 c. sliced almonds, toasted
2 tsp. powdered sugar
PANCAKE: Preheat oven to 425 degrees. Put butter into a 10 1/2 inch heavy skillet, preferably cast iron. Put into the oven to melt and heat while mixing the batter. Put eggs in blender or food processor and mix for 1 minute. Keep machine running and gradually add milk. Stop machine.
Combine flour, sugar and salt; add gradually to egg mixture. Continue blending 45 seconds. When butter is bubbling, pour batter into hot pan. Return quickly to oven and bake for 20 minutes. Pancake will rise up on sides and middle, when removed from oven pierce the middle so that the pancake falls slightly.
APPLES: In a skillet, melt the butter and sugar together over medium heat. Add the apples, cinnamon and nutmeg. Saute until softened and caramelized. Remove the pancake from the oven. Spread with the warm apricot jam and sprinkle with almonds. Spoon apples into pancake and sprinkle with powdered sugar.
