I ordered 10 flats of strawberries at a great price from Bountiful Baskets last week. You order on Monday, and they deliver on Saturday. Saturday was a very busy day! We had big responsibilities with the Dixie Scout Expo (see our St. George Happenings site for more details) but Bountiful Baskets happens so early in the morning, we decided to cram both of them in anyway! I trained for my last time that morning, and picked up my Strawberries. Well, they were able to get even a better price on the berries than they anticipated, so rather than deal with credits to everyone, we got double the berries! Great! I brought home 20 flats of beautiful berries! Wow! We were busy at Expo all day Friday, and then all day Saturday until around 6:30 p.m., to come home to all those strawberries! We loaded several flats in the car, and sent B around the neighborhood to share. We felt like it was Manna from heaven, and if we horded them all, then they would just go bad! So it was painful, but I sent about seven flats of strawberries to friends! Fun to share a treat totally healthy, fresh, beautiful! It was fun to talk about who we could share some with! I stayed up quite late (especially for the 4:30 a.m. morning I started with) making Frozen Strawberry Jam. We did about 40 pints and then about a dozen quarts because those were the bottles I had. It is so fun to pull yummy strawberry jam from the fridge to spread on delicious waffles in the morning! My kids have asked to have them for every meal! However, in an attempt to get all the jam into the freezer, I had to pull out some ribs, a roast, etc! We are so bountifully blessed! Sunday we made beautiful Strawberry pies and shared with several neighbors! We tried the Cream Cheese Strawberry recipe on Cooks.com. It was delicious! If I wasn't so bushed tonight I would make some more.
I did taxes with Josh today. I wasn't quite ready, but worked over the past several days to prepare (pulling a couple of late nights, and one near overnighter last week at the office!). I am grateful to have a good accountant who can see through and help us get done! He is fabulous!
I have two flats of strawberries hiding in the fridge downstairs. I need to get on my feet and go get them done! Strawberry pie with barbecue chicken and potato salad tonight sounds delicious! Yum!
